Which one of these 2 degrees would best equip you for the workforce?
1. A 3 year commerce (accounting) degree at one of the most prestigious universities in your state
2. A 4 year commerce (accounting) /arts (psychology) degree at a fairly reputable university in your state

Depends on what kind of job you are most interested in. I have been working at a big accounting firm for many years and would say if you are interested in something similar then filters on applications are certainly in place based on which university you studied in and your grades - so that prestigious uni is likely to open more doors.
But to say "equip you for the workforce" well, personally you might get more out of option 2 and perhaps it gives you more options if accounting isn't really your thing.
Also look beyond the overall status of the uni - some have specifically good reputations on a subject level even if the overall uni isn't as well thought of - this could add to, or take away from, the worth of both your options.
